We add mixture of scotch bonnet, red chillies, a few cloves of garlic and sweet peppers and combine them with a salt and sugar brine. We then ferment the mixture for 10 days, this allows the flavour to mature and develop. Once ready we blend to create a smooth, complex and spicy hot sauce. As this is still an active ferment, we recommend that you keep it in the fridge!
